Ige Ramos cooks up 3 regional versions of Adobo, the iconic pork dish of the Philippines that some argue is the same as Bali’s babi kecap. In between cooking, he will share the tale of Indonesian influence on one of Manila’s most famous restaurants, The Aristocrat, where they serve chicken with Java sauce kecap manis, and Java rice, nasi kuning. He will be joined by Bea Crisostomo, who will talk about Philippine heritage ingredients, the differences in flavour, and the importance of preserving these.
