Chef Fernando pays homage to his Sundanese-Palembang Grandmother by recreating some classic dishes with oncom, a traditional and much-loved fermented, plant-based food from West Java. He will also add some modern interpretations to cater for the health-conscious. Learn the difference between red and black oncom, and a host of easy-to-prepare recipes from one of Indonesia’s most impressive young chefs. Class includes recipes, tastings and refreshments.
