With his contemporary approach to Spanish and Catalan flavors at Singapore’s Esquina, Carlos Montobbio transports diners to the vibrant heart of Spain. He’ll share two dishes, working with intriguing ingredients such as horseradish ice cream, smoked walnuts, burrata, ají amarillo, and sweet, nutty sunchokes.
