Jorge Valderrama

Chef Jorge Valderrama, born in Chile, is currently based in Bali where he manages his first restaurant, the Cantina Rooftop, alongside his friend and fellow chef Cristian Encina. With a passion for culinary arts, Jorge has traveled the globe, studying Culinary Arts in Lima, Peru before embarking on his professional journey. He has worked in various restaurants across countries such as Australia, New Zealand, and Singapore. Jorge’s extensive experience in different culinary traditions and cultures has fueled his desire to understand and innovate with diverse cuisines, creating unique dishes. When he’s not in the kitchen, Jorge enjoys his hobby of surfing, even embarking on a 6-month surfing trip in West Indonesia.

Chef Jorge Valderrama, lahir di Chile, saat ini tinggal di Bali, tempatnya mengelola restoran pertama miliknya, Cantina Rooftop, bersama dengan kawan dan sesama chef Cristian Encina. Kecintaannya terhadap dunia kuliner telah membawanya keliling dunia, mempelajari Seni Kuliner di Lima, Peru sebelum memulai perjalanan profesionalnya. Ia telah bekerja di berbagai restoran di berbagai negara, macam Australia, New Zealand dan Singapura. Pengalaman Jorge yang luas dalam berbagai tradisi dan budaya kuliner telah membakar semangatnya untuk senantiasa memahami dan berinovasi dengan jenis makanan yang beragam. Saat ia sedang tidak memasak di dapur, ia adalah seorang peselancar yang telah melakukan penjelajahan selancar selama 6 bulan di Indonesia Barat.
