Filipino chef, Thirdy Dolatre, is a graduate of the Center of Culinary Arts in Manila. After starting his career as a line cook in Manila, he pursued further training as a Stagiaire at several Michelin-starred restaurants in San Francisco. His experience in some of the most renowned restaurants in the global culinary scene has equipped him with the skills and knowledge to launch Hapag, his own unique Filipino fine-dining concept. At Hapag, Chef Thirdy partners with Chef Nav to showcase their exceptional talent in blending traditional Filipino flavours with modern culinary techniques, creating dishes that are both innovative and reminiscent of home.
