Eka Sunarya

Wayan Eka Sunarya is the Executive Sous Chef of Mandapa, a Ritz-Carlton Reserve. Hailing from Buahan Village in Gianyar, his culinary journey began in Ubud at Ubud Hanging Gardens, where he started as a steward and gradually evolved into a cook’s assistant. Influenced by his mother’s love for preparing local ingredients using authentic recipes, Chef Eka actively engaged in family and community cooking activities. Whether crafting daily home meals or contributing to festive community gatherings, he embraced Balinese and Indonesian cuisine with enthusiasm. Driven by a passion for learning and a dream of international exposure, Chef Eka seized an opportunity to work at Vanil Restaurant in Moscow, Russia. His journey continued as he joined the pre-opening team at Mandapa, a Ritz-Carlton Reserve in 2015, immersing himself in the world of fine dining featuring both modern and authentic cuisine. Dedicated to creativity, he consistently sought out unique culinary experiences, emphasizing the use of local ingredients and collaborating with Bali’s farmers. In 2018, Chef Eka embarked on a new chapter, transferring to W Maldives to broaden his cultural and professional horizons. Returning to Bali in early 2019, he played a pivotal role in the pre-opening team of an ultra-luxury resort in Jimbaran before taking on the role of Culinary Curator with Buahan, a Banyan Tree escape, in April 2021. As of 2023, Wayan Eka Sunarya has returned to Mandapa, a Ritz-Carlton Reserve, and has joined Kubu, the resort’s signature bamboo restaurant.

Berasal dari Desa Buahan di Gianyar, perjalanan kulinernya bermula di Ubud Hanging Gardens, di mana ia memulai karirnya sebagai pelayan dan secara bertahap berkembang menjadi asisten juru masak. Dipengaruhi oleh kecintaan ibunya dalam mengolah bahan-bahan lokal dengan menggunakan resep autentik, Chef Eka aktif terlibat dalam kegiatan memasak di keluarga dan komunitasnya. Baik membuat makanan sehari-hari di rumah atau untuk pertemuan komunitas, ia sangat antusias terhadap masakan Bali dan Indonesia. Didorong oleh semangat belajar dan impian untuk dikenal di kancah internasional, Chef Eka memanfaatkan kesempatan untuk bekerja di Vanil Restaurant di Moskow, Rusia. Perjalanannya berlanjut saat ia bergabung dengan tim pra-pembukaan di Mandapa, a Ritz-Carlton Reserve pada tahun 2015, membenamkan dirinya dalam dunia santap mewah yang menyajikan masakan modern dan autentik. Berdedikasi pada kreativitas, ia secara konsisten mencari pengalaman kuliner yang unik, menekankan penggunaan bahan-bahan lokal dan berkolaborasi dengan petani Bali. Pada tahun 2018, Chef Eka memulai babak baru, pindah ke Maladewa untuk memperluas wawasan budaya dan profesionalnya. Kembali ke Bali pada awal tahun 2019, ia memainkan peran penting dalam tim pra-pembukaan sebuah resor mewah di Jimbaran sebelum mengambil peran sebagai Kurator Kuliner di Buahan, a Banyan Tree Escape, pada bulan April 2021. Pada tahun 2023, Wayan Eka Sunarya kembali ke Mandapa, a Ritz-Carlton Reserve, dan bergabung dengan Kubu, restoran bambu andalan resor tersebut.
