Maurizio Bombini

Maurizio Bombini is an Italian chef-owner of MAURI Restaurant and restaurateur from Puglia, recognised as one of the leading figures in Bali’s dining scene. Raised in his family’s seaside restaurant on the Adriatic coast, he developed an early passion for Southern Italian cuisine, which continues to shape his culinary identity. After building his career across Italy, France, the United States, China and Indonesia, he spent four years at Il Ristorante at Bvlgari Resort Bali and another four at Mandapa, a Ritz-Carlton Reserve in Ubud. In 2018, he opened MAURI in Seminyak, followed by Bonito Fish Bar in 2022 and Zia Tina, all rooted in his Puglian heritage and a strong connection to local produce. His work has earned multiple accolades, including the Wine Spectator Award of Excellence and Best Italian Restaurant at the Exquisite Awards, and he is also a brand ambassador for illy Coffee, S.Pellegrino, Acqua Panna and Château Minuty, as well as a member of the Dom Pérignon Society.
