In the candle-lit dining room of Uma Cucina, Ubud’s favourite Italian table, the evening begins slowly, then Maurizio Bombini of Mauri fame, Bali’s most beloved Italian chef, gets to work, Puglia in his bones, Bali in his hands, a lifetime of cooking guiding every move as the menu unfolds, fresh tuna and burrata, cool and bright, then tortelli, soft and rich, hand-shaped, folded one by one, ricotta and mascarpone lifted with Japanese sweet prawns and zucchini flowers, a clear consommé tying it all together, roasted barramundi follows, sharp with tomato and olive, dessert lingers, chocolate, citrus, a little salt, just enough to keep you there, a Pugliese feast, this is how Italians eat, mangiamo!
