Aman Lakhiani

Aman Lakhiani is the Founder and Executive Chef of Lamuri, Tamba Bar and Junsei, a modern yakitori restaurant celebrating the centuries-old art of Binchōtan charcoal grilling. A graduate of Johnson & Wales University and the Tsukiji Sushi Academy in Tokyo, Aman trained in acclaimed Michelin-starred kitchens including Dos Palillos in Barcelona, and gained further experience at Locavore NXT in Ubud and Akira Back Jakarta. Drawing inspiration from Tokyo’s izakayas and listening bars, his cuisine bridges precision and soul, blending Japanese tradition with global influence to create dishes defined by fire, finesse and quiet intensity. At Lamuri, he focuses on the ancient cuisines of Sumatra and South India, once connected through the historic island of Lamuri. His restaurants are located in the heart of Sanur on Jalan Danau Tamblingan.

Aman Lakhiani adalah Founder dan Executive Chef dari Lamuri, Tamba Bar, dan Junsei, restoran yakitori modern yang menghadirkan hidangan panggang khas Jepang dengan menggunakan arang Binchōtan. Ia merupakan lulusan Johnson & Wales University serta Tsukiji Sushi Academy di Tokyo. Aman pernah menjalani pelatihan di sejumlah restoran berbintang Michelin, termasuk Dos Palillos di Barcelona, serta menambah pengalamannya di Locavore NXT Ubud dan Akira Back Jakarta. Terinspirasi dari budaya makan dan bar di Tokyo, Aman menghadirkan hidangan yang memadukan teknik memasak Jepang dengan berbagai pengaruh rasa dari dunia internasional. Melalui Lamuri, ia juga menghadirkan inspirasi dari kuliner tradisional Sumatra dan India Selatan yang memiliki hubungan sejarah di masa lalu. Seluruh restorannya berada di kawasan Sanur, tepatnya di Jalan Danau Tamblingan.
