Richard Gillet of Atelier by Richard takes the stove for two acts. First, a masterclass in French charcuterie, a curated board of cured meats, fresh fruits, and accompaniments that shows how savoury and sweet find their balance through tradition and craft. Then comes the centrepiece: The Egg That Dreamed of Carbonara. A 64°C slow-cooked egg on wild mushroom purée and Parmigiano cream, finished with crispy guanciale, fine-sliced culatello, and pickled red onions. Classic Italian, reimagined with restraint and precision.
