Dylan Eitharong

Dylan Eitharong is a Thai-American chef and the owner of Haawm, an intimate supper club-style restaurant in Bangkok known for its bold, creative take on Thai cuisine. Born in Florida to a Thai father and American mother, his journey into cooking began as a personal passion and a way to reconnect with his heritage. He taught himself Thai dishes, hosted pop-ups, and later moved to Thailand to open Haawm in his aunt’s home. His ever-evolving multi-course menus blend historical Thai recipes with contemporary techniques and striking flavours, earning the restaurant a devoted following and consistently long waiting lists. Dylan’s cuisine is both deeply rooted in tradition and refreshingly original, reflecting his belief that every dish should be ‘loud’ in flavour and memorable. Beyond Haawm, he continues to engage in collaborations and dining experiences that present Thai cuisine in new and exciting ways.
