I Putu Dodik Sumarjana is the Balinese Head Chef of Locavore’s sister restaurant, Nusantara, serving rare regional dishes and forgotten recipes from across the Indonesian archipelago. Chef Putu started cooking at five years old, when he was taught the secrets of his village’s temple kitchen and began learning from his mother and grandparents at home. At 18, he joined the kitchen team at restaurant Locavore, where he regularly contributed to innovative new dishes on their seasonal menus and helped show the world what can be achieved with local ingredients.
