Syrco Bakker made his first break in the culinary world at 25, when Sergio Herman entrusted him to run the Pure C kitchen when it first opened in 2010—in the dunes of Cadzand village in the Zeeland province of the Netherlands. Herman became a mentor to Bakker, continually pushing them to improve their culinary skills.
Under Bakker’s skilful hands, Pure C received its second Michelin star in 2018, and just a year after that Bakker was named the Netherlands’ Chef of the Year by the Gault&Millau guide. At the age of 38, he thought it was time to open up his own food business; he’s going to open a restaurant called Syrco BASE in Ubud in November 2023.
