From the forests of Kalimantan to the kitchens of Sumatra and the Lesser Sunda Islands, three sambals tell the story of Indonesia’s extraordinary culinary diversity. Puan Rimba, representing the Women Forest Defenders under Seniman Pangan, joins Helianti Hilman, a leading advocate for Indonesia’s indigenous food systems, to present Sambal Payang, Sambal Terong Belanda, and Sambal Beberuk, celebrating the communities, ecosystems, and living wisdom behind each bold and distinctive flavour.

Dari hutan Kalimantan hingga dapur-dapur di Sumatra dan Nusa Tenggara, tiga sambal ini memperlihatkan beragam rasa dan tradisi kuliner Indonesia. Puan Rimba dari Women Forest Defenders bersama Seniman Pangan akan hadir bersama Helianti Hilman untuk memperkenalkan Sambal Payang, Sambal Terong Belanda, dan Sambal Beberuk. Lewat sesi ini, peserta diajak mengenal lebih dekat masyarakat, alam, dan tradisi yang membentuk cita rasa khas dari masing-masing sambal tersebut.
