Joe Napol descends on Indus’ indigo-washed twilight dining room, bringing Samlor, Bangkok’s Michelin Guide Thailand–listed cult favourite, to Ubud. One of Thailand’s culinary mavericks, he takes the soul of Thai street food and pushes it somewhere louder, bolder, and a little dangerous. The night kicks off with a trio of chilled seafood plates: Thai-style prawn ceviche with spicy lime vinaigrette, toasted rice-crusted ahi tuna crudo with sambal tomat, and lightly poached squid slicked with coconut and chilli. Then comes a Nasi Campur Bangkok of krapow slow-cooked pork belly, coconut-fried fish, wing bean yum salad, sambal embe, pork cracklings, and pickled fruit, before the final hit: caramelised palm sugar ice cream, coconut mochi, fried shallots, and caviar—sweet, salty, and just a little outrageous.
Price includes a 3-course dinner, with arrival time slots starting at 18:30, 19:00, 19:30, 20:00, 20:30 and 21:00.
