Joe Napol

Joe Napol is the Chef of Nawa Thai Cuisine, Samlor, Kwann and Verlan. Known for his distinctive and forward-thinking approach, he has become one of the defining figures of modern Thai gastronomy, transforming ideas into critically acclaimed dining destinations. Through his consultancy Banana Blossom, he leads a growing portfolio of restaurants across Bangkok, including Michelin-starred Nawa and Bib Gourmand-awarded Samlor, while remaining closely involved in each concept’s development and day-to-day operations. His work has earned widespread recognition, including being named to Prestige’s 300 High Flyers in 2025, and he is regarded as a key voice in shaping Thailand’s contemporary culinary landscape. Alongside his restaurant ventures, he frequently participates in leading culinary events both in Thailand and internationally. His forthcoming food lab and chef’s table will mark a new and more personal chapter, offering a space for experimentation and a deeper exploration of Thai ingredients and storytelling through cuisine.
