Indonesian chef Jovan Koraag has built his career on a deep love for the food of his homeland, channelled through his restaurants Mata Karanjang and Nasi Karanjang. In this session, he brings the vibrant culinary heritage of Manado to the stage through Ikan Woku, a bold and aromatic dish traditionally cooked with Woka leaves and rich local spices that captures the true soul of North Sulawesi cooking.
