Siargao descends on Cantina Rooftop in a rush of salt, smoke, and heat. In the low-lit open-air cantina overlooking Ubud’s most sacred temple, where the bar hums close to the flame, the night tightens and appetite sharpens. Three culinary forces converge as Dom Hammond and Chef Dre bring their beloved Filipino favourites with fire and precision, from kinilaw bright with vinegar to smoky bites built for late-night hunger, while Chilean-born Chef Cristian cuts in from another latitude with the bold, bright edge of Latin America through acid, char, and lingering heat. Three chefs, one rooftop, one instinct. Expect tropical cocktails layered with spice, late-night energy, and the kind of night Ubud doesn’t forget. Come hungry, leave glowing.
