I Made Suryana

I Made Suryana is a Balinese chef from Karangasem, shaped by years of work in Indonesia’s culinary scene, including 16 years at Casa Luna where he built a strong understanding of traditional archipelago cooking. At Indus, he now cooks with a grounded yet refined approach to Nusantara cuisine, focusing on indigenous ingredients and balance, with his Paella standing out as a signature dish that brings local flavours into a distinctive, well-composed interpretation.

I Made Suryana adalah chef asal Karangasem, Bali, dengan pengalaman panjang di dunia kuliner Indonesia. Ia pernah bekerja selama 16 tahun di Casa Luna, di mana ia memperdalam pemahamannya tentang masakan tradisional Nusantara. Saat ini, di Indus, ia mengolah masakan Nusantara dengan pendekatan yang sederhana tapi matang, dengan fokus pada bahan lokal dan rasa yang seimbang. Salah satu hidangan andalannya adalah paella, yang ia olah dengan sentuhan lokal hingga menjadi sajian yang khas.
