Chef Putu started cooking at 5 years old, when he was taught the secrets of his village’s temple kitchen and began learning from his mother and grandparents at home. When he was 18 he joined the kitchen team of restaurant Locavore, where he regularly contributed to innovative new dishes on their seasonal menus and helped show the world what can be achieved with local ingredients. Putu is now Head Chef of Locavore’s sister restaurant Nusantara, serving rare regional dishes and forgotten recipes from around the Indonesian archipelago.
