Known as the new enfant terrible of Bangkok’s culinary scene, he cooks with precision and provocation, drawing on northern Thai roots and the restless pulse of the capital. Fermentation runs deep. Jungle herbs cut sharp. Smoke, chilli and fire build slowly, then hit hard. Nothing polite. Nothing predictable. At Ubud Food Festival, Haawm does not whisper. It burns. Come hungry.
