In the intimate, almost otherworldly glow of Api Jiwa, set within the grounds of the award-winning Capella Ubud, Arvie Delvo and Petty Pandean-Elliott come together for a four-hands, ten-course dinner. Pandean-Elliott, leaning into her Manado heritage and known for pushing Indonesian food into new territory, marks the release of The Indonesian Vegetarian Table, cooking with a deep understanding of local ingredients. Delvo brings his own command of Asian flavours, precise, layered, quietly assured. Under the thick jungle canopy of Keliki, the menu moves through earth, ocean and ember. Think chilli-infused tofu laksa, delicate chawan mushi and pandan-scented, coconut-rich warm pineapple kolak for dessert, threaded through with aromatics, smoke and salt. Each course led by masters, by season, by instinct, a quiet homage to the archipelago and beyond. One of Bali’s most compelling settings. You’ll feel it long after you leave.
