Fernando Sindu

Fernando Sindu is an Indonesian chef, familiarly called Nando, marries Indonesian classic flavours with a modern taste. His cooking is shaped by experience across international kitchens, including training in New York after graduating from the Culinary Institute of America, where he developed a strong foundation in bold, ingredient-led cuisine. He now leads Salira, drawing on extensive travels across the Indonesian archipelago to create a menu rooted in regionality and everyday comfort. Alongside this, he has spent nearly a decade with The Union Group, shaping concepts such as Cork & Screw and Bar Luca, where his work reflects both global technique and a deep connection to Indonesian flavours.

Fernando Sindu adalah chef asal Indonesia yang akrab dipanggil Nando. Ia memadukan rasa klasik Indonesia dengan sentuhan modern dalam masakannya. Pengalamannya terbentuk dari berbagai dapur internasional, termasuk pelatihan di New York setelah lulus dari Culinary Institute of America, yang memberinya dasar kuat dalam mengolah bahan dengan berani dan tepat.
