Beyond the Recipe: How Culture Shapes the Way We Eat

This session opens with a provocation: “Farmers guard the land and sea. But who guards the knowledge of what grows there and why it matters?” The session is structured as a conversation between two practitioners with complementary perspectives: one working at the level of frameworks and policy, the other embedded in community and cultural life. Together, they trace the arc from global frameworks to the ground, from the NIBS framework that FCA uses to map food culture strategies, to a Catholic bishop’s pastoral letter in NTT, to a festival on a hilltop in Labuan Bajo where food, faith, and identity come together.

Sesi ini dibuka dengan sebuah pertanyaan: “Petani menjaga tanah dan laut. Tapi siapa yang menjaga pengetahuan tentang apa yang tumbuh di sana, dan kenapa itu penting?” Dalam percakapan ini, dua pembicara dengan latar belakang berbeda akan berbagi pandangan mereka. Yang satu banyak bekerja di bidang kebijakan dan strategi pangan, sementara yang lain dekat dengan kehidupan komunitas dan budaya masyarakat. Mereka akan membahas bagaimana pengetahuan tentang makanan dan budaya bisa terus dijaga dan diwariskan. Mulai dari pendekatan NIBS yang digunakan FCA dalam melihat budaya pangan, surat pastoral seorang uskup Katolik di NTT, hingga sebuah festival di Labuan Bajo yang mempertemukan makanan, keyakinan, dan identitas dalam satu ruang.
