Dingo Ate My Taco is at the forefront of Melbourne’s food truck scene, synonymous with birria tacos, and a mecca for unique and authentic border-food flavors. Former lawyers and Austin, Texas native Paul Walcutt and partner Kady Simkins opened Dingo in 2020 at the height of Melbourne’s Covid Lockdowns, joined shortly after by Melbourne native and now co-owner and Head Chef Isaac Castellano. Raised in a Texas BBQ restaurant family, Paul’s goal was to bring the kind of smoked meat tacos and fresh handmade tortillas found in central Texas to Melbourne, using only the best techniques and fresh ingredients. Sold Out almost every day for the first 2.5 years, Dingo introduced Melbourne to both Birria Quesatacos and the Breakfast Taco. With their elevated made-from-scratch menu, this food truck is popping up all over Melbourne, proving that good food can be made in a tiny space.
