Ingredients carry history. Peruvian chef Abel Ortiz Alvarez of Chullschick Group in Hong Kong and Colombian chef Andrés Becerra of Santanera, Canggu’s favourite Latin American haunt, explore the surprising connections between South American and Indonesian cuisine, shaped by shared biodiversity and deep culinary tradition. Their work shows how food travels, borrows, and transforms, carrying memory and landscape into every dish while finding new meaning in new environments.
